Simple Seto soup

Serves 4

This soup is often made to accompany potatoes or mashed potatoes. Try adding dried smelt and cooked beet-root to the salted water.

 

3 small cucumbers
100 g green onions
2 tsp fine salt
2 tsp vinegar
1 l water

 

Chop the onion tops into small pieces. Add salt. Rub the onions with the back of a spoon to soften them up. Cut the cucumbers into small sectors, add vinegar, part of the water and stir to dissolve the salt. Add the rest of the water. Let stand before serving or eating, to allow the flavours to develop. If you want even more intensity of flavour, you can finish it with some more vinegar.
